Last summer we did a lot of canning. We did jams, salsas, and fruits. One thing I learned through the process is that I much prefer the flavor and texture of freezer jams in comparison to traditional jams processed in a a water bath. Freezer jams just taste fresher and don't get that gelatinous texture that the regular jams can get.
I also have decided that I want to spend less time in front of a huge pot full of boiling water this summer so I will be making most (if not all) of my jams from freezer jam recipes this year. Oh and did I mention that freezer jams are way easier to make and take significantly less time?
Today I want to share a recipe I found on the Ball website when I recently came across a sweet deal on Mangos and needed to replenish my jam stash. It's much easier to make than it looks and let me just say that this jam turned out so delicious and is very pretty in my freezer! I love the technique of swirling the two flavors together.

Notes:
- This recipe makes 10-12 8 oz jars of jam. If that sounds like way too much for you, then just cut the recipe in half.
- I ended up using 10 medium sized mangos.
- For the berry portion of the recipe, I used frozen blackberries and strawberries that I already had in my freezer from last summer. But I'm sure any berry combination would be equally delicious. I did notice that the frozen strawberries crushed better than fresh ones do which game me a less chunky texture.
- Rather than using the special freezer jars, I just use the glass 8oz glass mason jars.
Honey Lime Mango Berry Swirl Jam

You will need:
10 Tbsp Ball® RealFruit® Instant Pectin, divided
3-1/2 cups crushed mango
3 Tbsp fresh lime juice, divided
1/2 cup honey, divided
3-3/4 cups crushed mixed berries (any combo of strawberries, raspberries, blueberries and blackberries)
10 Plastic Ball® (8 oz) Freezer Jars
Directions:
- STIR 1-1/2 cups sugar and 5 Tbsp instant pectin in a bowl until well blended. Add mango, 1-1/2 Tbsp lime juice and 1/4 cup honey. Stir 3 minutes.
- STIR remaining 1-1/2 cups sugar and 5 Tbsp instant pectin in a bowl until well blended. Add mixed berries, remaining 1-1/2 Tbsp lime juice and remaining 1/4 cup honey. Stir 3 minutes.
- TILT jar, one at a time, pouring about 1/2 full with one flavor freezer jam. Keeping jar tilted, spoon second flavor on other side of jar. Repeat for remaining jars.
- TWIST on lids. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks or freeze up to 1 year.
